You can use a differnt type of vegetable like broccoli or asparagus.


Sprinkling Scallion and Sesame seed would also be great addition. But, hey, go with what you have.

  1. 1- Heat a wok over high heat and add coconut oil.


  2. 2- Add cubed tofu and cook for 2-3 minutes until browned. Remove and place in a bowl or plate.


  3. 3- Add the mushrooms and cook until done sweating. Add the minced garlic. Stir fry for a minute or two and then add the sliced bok choy until tender.


  4. 4- Put back the tofu you removed in step 2 and add soy sauce, salt, and pepper to taste. Toss or stir to combine.
